2 lb cauliflower (frozen works well)
8 cloves garlic
2 shallots
1/2 cup olive oil
5 cups chicken broth
1 cup water
3 Tablespoons fresh dill, optional
1/4 teaspoon salt
1/4 teaspoon white pepper
1 cup soy milk

  • Preheat oven to 300 degrees Fahrenheit. On a baking sheet, combine cauliflower, garlic, shallots, and oil. Roast for 1 hour and 10 minutes, stirring every 30 minutes.
  • In a 6 quart pot, combine roasted veggies, chicken broth, and water. Bring to a boil. Add spices, and 1 tablespoon dill. Cover pot and simmer for a 1/2 hour.
  • Uncover pot and add remaining 2 Tablespoons dill.
  • Using an immersion blender, puree the soup.
  • Add soy milk and bring to an almost boil before serving. Garnish with fresh dill.
Serve with crusty bread!
