Creamy Cauliflower Zucchini Soup - Dietetic!

3 Tablespoons coconut oil
1 onion, diced
1 medium zucchini, cubed
2 lb cauliflower (fresh or frozen)
Approximately 5 cups chicken stock, vegetable broth or water
salt and pepper, to taste

  • In a 6 quart pot, heat oil. Add onion and saute until transparent, approximately 7 minutes.
  • Add cubed zucchini and cauliflower. Cover pot and saute for 10-15 minutes, until veggies are soft.
  • Add broth or water - enough to cover veggies completely. Add salt and pepper.
  • Bring water to a boil. Lower flame and cook for 45 minutes to an hour.
  • Cool for 10 minutes and then blend with an immersion/stick blender.
Roast cauliflower on a greased baking sheet for 45 minutes before boiling, to bring the flavor from yum to divine!
