old fashioned cake and cookie mix 1/2 cup coconut oil, vegetable shortening, or softened butter/margarine 2 large eggs, lightly beaten or 1/2 cup pureed soft silken tofu 1 teaspoon gluten-free vanilla extract 2 Tablespoons sugar mixed with 1 Tablespoon cinnamon (for coating cookies)

Preheat oven to 350 degrees.
In large bowl, beat coconut oil/shortening/margarine until light and fluffy.
Add old fashioned cake and cookie mix. Beat to combine.
Add eggs and vanilla and beat.
Roll batter into 1 inch balls.
Roll balls in sugar/cinnamon mix and set 1 inch apart on lightly greased cookie sheets.
Bake for 15 minutes.
Remove and cool.
