Honey Cake

A soft honey cake that remains a favorite among children and adults alike! Great for Rosh Hashana and all year round. Low sugar content but still delicious! Adapted from Gluten Free Goes Gourmet by Vicky Pearl.

4 eggs 
1 cup sugar
3/4 cup oil
1 cup honey
1 Tablespoon coffee granules
1 1/2 cups boiling water
1 cup brown rice flour
3/4 cup sweet rice flour
1 1/4 cups potato starch
3/4 cup tapioca starch
2 teaspoons xanthan gum
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1/2 teaspoon cinnamon, optional

  • Preheat oven to 350 degrees Fahrenheit. Line a 9x13 inch baking pan with parchment paper.
  • In the bowl of an electric mixer, cream eggs and sugar. Slowly add oil, and then honey, in a thin steady stream.
  • Dissolve coffee granules in boiling water.
  • In a separate bowl, combine flours, xanthan gum, baking soda, baking powder, and cinnamon.
  • Add the coffee mixture and dry ingredients, alternating between the two. Add a bit at a time, and keep mixing, until a smooth batter is formed.
  • Pour batter into prepared pan, spreading evenly.
  • Bake in the center of preheated oven for 1 hour, or until toothpick inserted in center of cake comes out clean. Cool completely.
Best served the next day. Freezes well. Can be frozen for up to 4 months.
