5 cups gluten free all purpose baking flour
4 ounces butter or shortening(1 stick)
4 1/2 Tablespoons dry yeast
4 eggs
1 cup milk, room temperature
1/2 cup sugar
3/4 teaspoon salt 
1/4 teaspoon vanilla powder

1 cup water
1 teaspoon lemon juice
1/4 teaspoon vanilla powder

  • Combine flour, salt, yeast, and sugar. Add eggs, milk, sugar, salt and vanilla powder. Mix until dough forms.
  • Let dough rest for 30 minutes. After 1/2 hour, roll dough into a large rectangle.
  • Combine filling ingredients. Spread buttery mixture over entire rectangle of dough. Fold dough into thirds, bringing up the bottom third, and then the top third - like an envelope.
  • Let dough rest in the fridge for 4 hours or overnight.
  • Preheat oven to 350 degrees Fahrenheit. Divide dough into three. Roll one third of dough into a rectangle. Cut triangles. Roll each triangle into a croissant. Place on lined baking sheet.
  • Repeat with remaining dough.
  • Bake croissants for 20 minutes until golden.
  • In a small bowl, mix glaze ingredients. Dip croissants into glaze immediately upon coming out of oven. Let cool.
Enjoy croissants with butter, or on its own. For an delicous twist, place a rectangle of chocolate (a line of 3 squares) onto the wide end of the triangle before rolling the croissant. You'll be treated to a heavenly treat!
