Roasted and Glazed Acorn Squash

Acorn squash is great for use in side dishes. It stays fresh for long and its flower-like appearance makes for a pretty dish. The ginger in this recipe adds a delightful zing to the squash! Adapted from www.kosherscoop.com

Ingredients

2 acorn squash
Maple syrup
Ground ginger
Kosher salt
Freshly ground black pepper

Directions

  • Preheat oven to 400 degrees Fahrenheit.
  • Slice acorn squash crosswise, creating rings. Scoop out the pits in the center and discard. Slice each ring in half.
  • Lay rings on a baking sheet. Brush generously with maple syrup and sprinkle ginger. Season with salt and pepper.
  • Roast squash in oven for 10 minutes. Remove from oven and flip each piece over. Brush with maple syrup and season lightly.
  • Return squash to oven for another 10 - 15 minutes, until soft.
Optional - leave squash as rings and fill with wild rice before serving!
