Ingredients 1/2 cup
2 lb cubed turkey
oil, for frying
1 onion, diced
8 oz fresh mushrooms, sliced
red pepper, diced
yellow pepper, diced
orange pepper, diced
16 oz can tomato juice
1 Tablespoon brown sugar

Coat turkey pieces in cornstarch.
In a large covered skillet, heat oil. Fry each piece for 1 minute per side, until golden. Remove from pan.
In the same pan, saute onions until transluscent - 7 minutes. Add sliced mushrooms and three color peppers. Saute until soft, 15 - 20 minuts
Add tomato juice and brown sugar to the pan. Bring to a boil and add turkey.
Bring to a boil and then lower heat. Simmer, with pan slightly uncovered, for 2 hours.
Serve on a bed of brown rice for a complete meal!
