Preheat oven to 350 degrees Fahrenheit. Grease three 8-inch round pans.
In a large bowl, combine sugar, oil and eggs. In a separate bowl, add food coloring and vinegar to buttermilk. In a third bowl, combine baking soda and flour. Combine buttermilk mixture and flour mixture to oil mixture, alternating between wet and dry. Mix well.
Stir 1 teaspoon vanilla extract into batter. Divide batter evenly among three baking pans. Bake for 20 - 25 minutes, until done. Remove from oven and cool on wire rack.
For frosting: Combine cream cheese, butter, confectioner's sugar, and 1 teaspoon vanilla extract. Stir in pecans (optional). Spread frosting between each layer. Frost entire cake and decorate as desired.
