POMEGRANATE ICE CREAM - Dairy Free option

1 lime or 2 Tablespoons lemon juice 1 1/2 cups agave2 cups heavy cream or non-dairy whipping cream

Juice two of the pomegranates and the lime. Strain juices into a bowl. Add the agave and whisk to combine.
De-seed the third pomegranate. You'll use the seeds for serving and to mix into the ice cream, if wanted.
In the bowl of an electric mixer, whip up the heavy cream, until soft peaks form. Add the pomegranate/lime juice mixture.
Spoon ice cream into an airtight container. Freeze for at least four hours before serving.
Serving instructions: Scoop ice cream into a bowl and scatter pomegranate arils over ice cream.
Optional: Stir about half of the pomegranate seeds into the ice cream before freezing.
Non- Dairy Alternative: Substitute heavy cream with 2 cups of non-dairy whipping cream.
