Mmmm! The thought of plum pie makes my mouth water! Stock up when plums are in season - make plenty of pies, freeze 'em raw and bake during those cold winter days!

Ingredients

Crust:
1/2 cup sweet rice flour
1/2 cup tapioca starch
1 teaspoon xanthan gum
3/4 cup sugar
1 stick margarine or shortening
Pinch of salt
1 teaspoon baking powder
2 eggs 
1 teaspoon vanilla sugar 

Filling:
10 Hungarian Plums

Directions

  • Combine ingredients in the mixer, mixture will be a bit sticky.
  • Flatten dough into a 9 inch round foil.
  • Slice plums and place face down in the round foil on top of dough mixture. Plum should form a picture like a flower.
  • Combine 1 teaspoon of cinnamon with 1 Tablespoon of sugar and sprinkle on top.
  • Bake 1 hour at 350.
For the apple variation: Slice 3 Cortland apples thinly instead of the plums.
