Special Chocolate Mousse
For those special occasions... This dessert is sublime! Can be served in mini trifle cups, martini glasses, or placed in a mousse cup with gluten free cookie crumbs on the bottom... Adapted from Gluten Free Goes Gourmet, by Vicky Pearl.

Set a double boiler over simmering (not boiling) water. Melt chocolate and margarine.
Transfer chocolate mixture into a bowl. Add eggs, one at a time, and stir well to combine. Add agave and mix well. Use an immersion blender to smooth out any lumps.
Fill martini glasses or trifle cups with chocolate mousse mixture, 3/4 full. Place in freezer until firm, at least 4 hours.
Slightly defrost ice cream. Fill remaining 1/4 of mousse cups with non-dairy ice cream.
Sprinkle garnish of choice and freeze until ready to serve.
Can substitute whipped topping for ice cream.
