1 lb. halva paste 
2 lbs gluten free semisweet or bittersweet chocolate 
6 ounces halva, cut into 1/2 inch cubes 
Additional 8 ounces gluten free semisweet or bittersweet chocolate, for coating (optional)
Crushed nuts, for garnish

  • Melt chocolate in a double boiler over medium heat. Add halva paste and stir well to combine.Use an immersion blender is smooth out any lumps. Add halva cubes and gently incorporate into mixture, taking care not to break them up.
  • Cut the acetate sheet in half, lengthwise. Line the mold with the one half of the acetate sheet and then the texture sheet. Reserve the other half of the acetate sheet for another use.
  • Pour the chocolate mixture into the mold and place into the refrigerator to set, approximately 2 hours.
  • When the log is firm, release the two ends with the tip of a metal spatula, and invert the log onto a tray. Gently remove the acetate and texture sheets.
  • (Optional) Melt semisweet chocolate. Place chocolate log on a cooling rack, with a parchment paper underneath. Pour melted chocolate over log, making sure to cover the entire surface of the log. Garnish with crushed nuts.
Can brush chocolate log lightly with luster dust. Store at room temperature.
