Honey Oatmeal Chocolate Chip Cookies
A crispy, yet slightly sweet oatmeal cookie. Serve with a cold glass of milk!

Preheat oven to 350 degrees Fahrenheit.
In a medium mixing bowl, beat oil and sugar until light and fluffy. Add honey. Add egg and vanilla. Blend until smooth.
In a separate mixing bowl, combine rolledd oats, cake flour, cinnamon, salt, and baking soda. Blend flour mixture into honey batter.
Stir in chocolate chips.
Scoop or drop tablespoons of batter onto a greased baking sheet. Bake for 10 - 15 minutes until golden.
Allow cookies to cool for 2 - 3 minutes before removing from cooking sheet, and then cool completely on a wire rack. Store in an airtight container.
Replace chocolate chips with raisins, caramel chips, or nougat chips for a delightful version of this yummy treat!
