1/2 cup coconut oil
1/2 cup organic sugar
1/2 cup honey
1 egg
1 teaspoon vanilla extract
1 1/2 cup quick cooking rolled oats
1 cup cake flour blend
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 teaspoon baking soda

Directions

  • Preheat oven to 350 degrees Fahrenheit.
  • In a medium mixing bowl, beat oil and sugar until light and fluffy. Add honey. Add egg and vanilla. Blend until smooth.
  • In a separate mixing bowl, combine rolledd oats, cake flour, cinnamon, salt, and baking soda. Blend flour mixture into honey batter.
  • Stir in chocolate chips.
  • Scoop or drop tablespoons of batter onto a greased baking sheet. Bake for 10 - 15 minutes until golden.
  • Allow cookies to cool for 2 - 3 minutes before removing from cooking sheet, and then cool completely on a wire rack. Store in an airtight container.
Replace chocolate chips with raisins, caramel chips, or nougat chips for a delightful version of this yummy treat!
