Directions

  • Preheat oven to 350 degrees Fahrenheit.
  • Combine soy milk and baking soda in a medium sized bowl.
  • Add in sugar, oil, egg, and nectar. Mix well.
  • In a separate bowl, sift together oat flour, sweet rice flour, and tapioca flour. Add flour mixture to batter. Mix until well combined.
  • Stir in chocolate chunks.
  • Spoon batter into paper-lined cupcake tins.
  • Bake for 20-25 minutes
Store in an airtight container or in the freezer. Yields approximately 12 large muffins.
