Ingredients

2 1/2 cups gluten free rolled oats 
1 cup oat flour 
1/2 teaspoon baking soda 
1/2 teaspoon salt
2/3 cup dried apricots, chopped 
1/2 cup mini chocolate chips 
1/3 cup chopped almonds or walnuts
1/2 cup craisins, optional 
1/2 cup brown sugar
1/2 cup raw blue agave nectar
1/2 cup almond or cashew butter 
1/2 cup oil or 1/8 cup oil and 1/8 cup applesauce
2 egg whites or 1 whole egg

Directions

  • Preheat oven to 350 degrees.
  • In a large-sized bowl, combine gluten free rolled oats, oat flour, baking soda, and salt.
  • In a separate bowl, combine dried apricots, mini chocolate chips, chopped nuts, and craisins, if using.
  • In a third bowl combine brown sugar, agave nectar, almond butter, oil (or oil and applesauce) and egg.
  • Stir wet brown sugar mixture (bowl #3) into rolled oats (bowl #1). Mix well.
  • Add dried apricot mixture (bowl #2) and stir well to combine.
  • Grease a baking sheet or line with parchment paper. Spread granola batter onto baking sheet.
  • Bake for 30 - 35 minutes.
  • Remove from oven, cool completely and then cut into 2-inch x 2-inch squares.
Optional - instead of cutting into squares, drop tablespoons of batter onto baking sheet and bake for 20-30 minutes. Enjoy your granola chews!
