This delightful gluten free red velvet cake is light, fluffy, and tastes absolutely fabulous! Recipe makes 1 8-inch layer cake. Frost with your favorite buttercream or cream cheese frosting recipe (included) ! Adapted from allrecipes.com
2 1/2 cups gluten free all purpose baking flour
1 1/2 cups cane sugar
1 cup vegetable oil
1 teaspoon baking soda
1 teaspoon distilled white vinegar
2 teaspoons vanilla extract, divided
1 cup buttermilk
2 ounces red food coloring
1 8oz package cream cheese, softened
1/2 cup butter, softened
4 cups confectioner's sugar
1/2 cup chopped pecans, optional
1. Preheat oven to 350 degrees Fahrenheit. Grease three 8-inch round pans.
2. In a large bowl, combine sugar, oil and eggs. In a separate bowl, add food coloring and vinegar to buttermilk. In a third bowl, combine baking soda and flour. Combine buttermilk mixture and flour mixture to oil mixture, alternating between wet and dry. Mix well.
3. Stir 1 teaspoon vanilla extract into batter. Divide batter evenly among three baking pans. Bake for 20 - 25 minutes, until done. Remove from oven and cool on wire rack.
4. For frosting: Combine cream cheese, butter, confectioner's sugar, and 1 teaspoon vanilla extract. Stir in pecans (optional). Spread frosting between each layer. Frost entire cake and decorate as desired.
