Gluten Free Chocolate Chip Cookies, Low Sugar
These divine cookies are easy to make and taste delicious too! With the low sugar content, you don't have to worry about eating another one!

Ingredients:
2 cups brown rice flour
1/4 cup plus 2 Tablespoons tapioca starch
1/2 cup plus 2 Tablespoons oil
1/2 teaspoon kosher salt
1 teaspoon baking soda
1 1/2 teaspoons xanthan gum
1/4 cup organic sugar
1/2 cup light brown sugar
2 eggs
2 Tablespoons rice milk
1 teaspoon vanilla extract
12 oz semi-sweet chocolate chips

Directions:
1. Preheat oven to 375 degrees Fahrenheit.

2. Sift the rice flour, tapioca starch, xanthan gum, salt, and baking soda into a medium bowl. Set aside.

3. Cream sugar and light brown sugar with oil in a medium sized mixer bowl. Add eggs, rice milk, and vanilla extract, mixing well after each addition. Add in the flour mixture. Mix until thoroughly combined. Stir in chocolate chips.

4. Form dough into a ball and wrap well in plastic wrap. Chill in fridge until firm, about 1 hour. Shape the dough into 2-ounce balls and place on parchment-lined baking sheet. Spread balls about 1 inch apart. Flatten balls with a spoon.

5. Bake for 20 minutes. If you place more that one sheet in the oven, then rotate them after 10 minutes. Remove from oven after 20 minutes of baking and allow to cool on cookie sheet for 2 minutes. Remove and cool on wire rack.
