GLUTEN FREE PLUM PIE RECIPE
Ingredients: Crust:
1/2 cup sweet rice flour authentic
1/2cup tapioca starch
1 tsp. xanthan gum
3/4 cup sugar
1 stick margarine
Pinch of salt
1 tsp. baking powder.
2 eggs
1 tsp. vanilla sugar
Filling:
10 Hungarian Plums
Directions:
1. Combine ingredients in the mixer, mixture will be a bit sticky.
2. Flatten dough into a 9 inch round foil.
3. Slice plums and place face down in the round foil on top of dough mixture. Plum should form a picture like a flower.
4. Combine 1 tsp. of cinnamon with 1 tbs. of sugar and sprinkle on top.
5. Bake 1 hour at 350.
For the apple variation: Slice 3 Cortland apples thinly instead of the plums.
